We were on the island of Oahu and meeting up with my ex-neighbor, Marjan and her family for dinner. They suggested this local spot that they love. We ordered a bunch of dishes to share family style. It was love at first sight – spicy kimchi fried rice. The vibrant red color and glistening grains of rice coated with absolute deliciousness. I was inspired and created my own. I added pancetta, morsels of saltiness, to the dish and fried egg with the creamy yolk oozing into the rice.
